America’s oldest brewing school, founded in 1868.
For-profit brewing-science trade school founded in 1868 by German immigrant chemist John Ewald Siebel. Moved to 322 S Green in 2019, with two classrooms, a 1,000-square-foot teaching pilot brewery, can-filler station, mash-filter technology, and “The Beerstube” training bar. The institute announced in November 2025 that operations will relocate from Chicago to Montreal, Québec, effective January 1, 2026.
