Founded by Joe Weber and co-founder Sean DiGioia, Four Star Mushrooms is an urban controlled-environment mushroom farm on North Oakley growing seven gourmet varieties year-round across 17 climate-controlled grow rooms. The operation supplies Michelin-starred Chicago restaurants and offers 90-minute public tours. Spent substrate is recycled into soil-restoration projects.
